I began thinking about Sunday soup yesterday. I have a delicious vegetable/chick pea soup in my memory. I came close. The “Once upon a time” of most soups is the same- a mirepoix (or sofrito or soffritto or the Cajun holy trinity) filling the kitchen with delicious aroma. I love the sounds of soup- the chopping followed by stirring followed by firmly tapping the wooden spoon on the rim of the soup pot. I love slurp-tasting spoonfuls, checking for salt and herb balance. I love wafting the aromatic soup-steam toward my face. I simply love making soup. Today’s soup story continued with dried herbs, spices, potatoes, broccoli, broth and chick peas. Sadly, I was out of my farmers’ market-veggie-made broth but I always have Better than Bouillon in the fridge. Fresh, chopped parsley completes the story as a perfect flavor brightening “The End.”
