Cupcakes have been on my mind. A lot. My big wanting of a cupcake isn’t new to me or to anyone who knows me. I almost bought a beautiful fancy cupcake today. Almost. I didn’t do it. They looked amazing. Filled and drizzled and sprinkled with things I like- Oreos, pecans, caramel, chocolate chips, peanut butter cups, candy bits- but somehow they just didn’t do it for me today. But as our lazy day wore on and I woke from second nap, the big wanting grew. It grew until I rummaged through the pantry and cabinets and covered the island with all the powders and granules and bowls. Yes, it would have been easier to buy the fancy gooey concoction, but these simple vanilla cupcakes with simple vanilla buttercream frosting and a few simple berries were simply perfect.
